Tunisian Couscous: The Traditional, Authentic Recipe

Generous and fragrant, this traditional Tunisian couscous brings together meat, seasonal vegetables and a Tunisian-style spiced tomato sauce. A family recipe, simple to make at home, where artisanal harissa and Sabra hrous give the dish all its spicy character.

Ingredients

  • Couscous semolina
  • Chicken or meat
  • Onion
  • Carrots
  • Potatoes
  • Zucchini
  • Chickpeas
  • Olive oil
  • Salt, pepper, turmeric
Method

The sauce. Heat a drizzle of olive oil in a pot, then sauté the sliced onion.

The Tunisian flavor. Stir in a spoonful of Sabra Harissa, a touch of Sabra Hrous, one to two spoonfuls of Sabra Tomato Paste and a little Sabra Crushed Tomatoes.

The meat. Add the chicken or meat, season with salt, pepper and turmeric, add a little water and cook for a few minutes.

The vegetables. Add the carrots and potatoes, then the zucchini and chickpeas. Simmer until the vegetables are tender.

The semolina. Pour the semolina into a dish, add a little hot water, salt and olive oil, then fluff it with a fork or your hands. Steam it, or alternatively cook it with hot water.

Plating. Arrange the semolina on a plate, top with the sauce, meat and vegetables.
