Tunisian Lablabi

Served piping hot over stale bread, lablabi is one of the most popular dishes in Tunisian street food. Simple and hearty, its whole personality comes from its seasoning — harissa and hrous above all.

Sabra Products Used

Ingredients

  • Cooked chickpeas
  • Stale bread
  • Garlic
  • Olive oil
  • Cumin
  • Salt
  • Hot water
  • Egg (optional)
Method

The chickpeas. Heat the chickpeas in a pot with a little water.

The flavor base. In a bowl, mix a spoonful of Sabra Harissa, a little Sabra Hrous and a touch of Sabra Smoked Hrous for the smoky note.

Assembly. Cut the bread into pieces in a bowl, pour the chickpeas and their hot cooking water over the top.

Finishing. Add the harissa-hrous mix, a drizzle of olive oil, a pinch of cumin, and an egg if you like.
